Promoting research and development on canned fish marinated with khmer herb productsThe National Institute of Science, Technology and Innovation (NISTI), in collaboration with the Royal University of Phnom Penh (RUPP) and UNICA Enterprise, has implemented a research and development project on canned fish marinated with khmer herb products to create a canned food product that provides convenience for consumers, along with quality, safety and maintaining the original taste of Cambodian food.
The project focuses on developing a product prototype through formulation study, production process testing, sensory testing, facilitating the transfer of food processing technology, and providing technical guidance to UNICA Enterprise on product quality, food safety, packaging and product shelf-life evaluation in preparation for future production and commercialization. The project also contributes to adding value to local fisheries resources and promoting the food processing industry in Cambodia.
